The Project tool has the option of creating a standard curve instead of a curve-on-surface. Selecting Match Original creates the projected curve with the same number of spans as the curve being projected.
Selecting Curve fit fits a free curve to the projected curve-on-surface and lets you adjust the Degree and number of Spans with sliders.
