After selecting a folder to be indexed, Vault creates jobs to create indexes for the files in the folder. The Job Processor may not be running or has not yet handled the jobs. For large folders that are chosen to be indexed for Duplicate Search, consider dedicating a Job Processor machine where only specific jobs are enabled.
If folders aren't indexed, check your server version. Only 2020.2 and newer support Duplicate Search. You need to upgrade the server to a 2020.2 version or later, before you can configure the folders for indexing to view the data.
