Imagine a hospital with 100 identical bathrooms. You can apply the surface material style "Bath Room" to all bathrooms and all interior finish materials are applied as well. The global assignment can be changed individually when editing the calculated room surfaces.
The connection between spaces and surface materials is just an option. If you do not apply surface materials to spaces, then the surfaces are calculated by object, which means with the materials that are assigned to the object (wall, floor, and so on) by AutoCAD.
